Trucker Gourmet: Microwave Recipes

For OTR truckers the ultimate question is “to eat, or not to eat” at a truck stop. If you are looking for better options, using a microwave for cooking your own meals is a good solution. But, it is ultimately up to you to decide whether you want to prepare their own food while on the road using a microwave. Some truckers may prefer to prepare their own food because it allows them to control the ingredients and ensure that they are eating healthy, balanced meals. Others may prefer to purchase prepared meals or eat at truck stops and restaurants while on the road.


THE PROS AND CONS TO COOKING OR EATING OUT


There are pros and cons to both approaches. Preparing meals at home with a microwave can be more cost-effective and allow truckers to control their portion sizes, but it can also require more time and effort to plan and prepare meals. Purchasing prepared meals or eating out can be more convenient, but it can also be more expensive and may not always offer as many healthy options.


SAVE TIME USING A MULTI-COOKER


A microwave can be a time-saving appliance for truckers because it can cook food faster than traditional cooking methods. This means that truckers can prepare meals quickly and eat when they are on the road. It may be helpful for truckers to consider their budget, time constraints, and nutritional needs when deciding how to handle meals while on the road.


If you are considering using a microwave to prepare meals while on the road, here are some simple and quick and delicious recipes. Who knows, you could even become a gourmet trucker!


Three Delightful breakfast microwave recipes

Quick porridge 


  • 1/2 cup Quaker Oats
  • 1 cup of low-fat milk
  • 2 tablespoons of a sweetener of your choice
  • A pinch of salt
  • (Optional) Toppings like berries, nuts, or cinnamon


Add oats and milk and stir. Microwave on full power for 2 and a half to 3 minutes. Add two tablespoons of a sweetener of your choice--honey or even maple syrup are great options! Then, add a pinch of salt, this helps the natural hearty richness of the oatmeal shine. Finally, if you'd like, add toppings of your choice--we love dried berries and apple pieces. Mix together and enjoy!

Scrambled eggs


  • 3 eggs
  • 2 oz of milk
  • Salt and pepper to taste--at the end


With a fork or coffee frother, blend milk and eggs in a microwave safe dish. Microwave it on full power for 1 minute. Take it out and fluff the eggs with a fork. Microwave it on full power for 30 seconds again. Take it out and mix it again. Microwave it on full power for 20 seconds again. Take it out and mix it again. Microwave it on full power for 10 seconds again.


It's best to add salt and pepper after cooking because otherwise the eggs become watery. And enjoy!

1 minute microwave Mug Pancake

  • 1 tbsp of Butter 
  • 3/4 tbsp of Sugar 
  • 2 tbsp of Milk
  • 3 tbsp plain flour 
  • 1/4 tsp Baking powder
  • (Optional) Toppings and/or syrup


Add butter to the cup. Melt the butter in the microwave, usually it takes less than 20 seconds. Add sugar, milk, and mix. After that add flour and baking powder. Mix it until the mixture just barely comes together--there may be small lumps, but there should be no visible flour. Microwave for one minute or until the pancake is light and fluffy. You can top it up with anything you like like bananas, berries, or syrup. Dig in and enjoy!
